Vietnamese Lemongrass Chicken

Ingredients
- 1.75 lb boneless skinless chicken thighs
- 3 lemongrass stalks
- 5 garlic cloves
- 2 shallots
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 2 Thai chilies
- 2 tbsp lime juice
- 2 tbsp neutral oil
- 3 scallions
- 4 cups cooked jasmine rice
How to cook it
- Finely mince the tender inner lemongrass, garlic, shallots, and chilies.
- Toss the chicken with half the lemongrass mixture, the fish sauce, and the brown sugar and marinate 15 minutes.
- Heat the oil in a large skillet over medium-high and cook the remaining lemongrass mixture until fragrant, about 1 minute.
- Add the chicken and its marinade and cook, stirring, until caramelized and cooked through, about 12 minutes.
- Finish with a squeeze of lime and the sliced scallions.
- Serve over the jasmine rice.
