Chicken Pho

Ingredients

  • 2 lb bone-in chicken pieces
  • 8 oz flat rice noodles
  • 1 onion
  • 3 inch piece ginger
  • 3 star anise
  • 1 cinnamon stick
  • 3 whole cloves
  • 1 tbsp coriander seeds
  • 3 tbsp fish sauce
  • 8 cups water
  • 2 cups bean sprouts
  • 1 cup Thai basil
  • 2 limes
  • 2 jalapenos
  • 1/2 cup cilantro
  • 1 tsp salt

How to cook it

  1. Char the onion and ginger under the broiler or in a dry pan until blackened in spots, about 5 minutes.
  2. Toast the star anise, cinnamon, cloves, and coriander in a dry pot until fragrant, 1 minute.
  3. Add the chicken, charred onion and ginger, fish sauce, salt, and water, and simmer gently for 45 minutes.
  4. Remove the chicken, shred the meat, and strain the broth.
  5. Soak the rice noodles in hot water until tender, then divide among bowls with the shredded chicken.
  6. Ladle the hot broth over the top and serve with bean sprouts, Thai basil, lime, jalapeno, and cilantro.
