Lemongrass Tofu Stir-Fry

Ingredients
- 28 oz extra-firm tofu
- 3 lemongrass stalks
- 5 garlic cloves
- 2 shallots
- 2 Thai chilies
- 3 tbsp soy sauce
- 1 tbsp sugar
- 2 tbsp lime juice
- 3 scallions
- 3 tbsp neutral oil
- 4 cups cooked jasmine rice
How to cook it
- Press the tofu dry and cut it into cubes.
- Finely mince the tender inner lemongrass, garlic, shallots, and chilies.
- Heat the oil in a wok over medium-high and fry the tofu until golden and crisp on all sides, about 10 minutes, then push it aside.
- Add the lemongrass mixture and stir-fry until fragrant, about 1 minute.
- Add the soy sauce, sugar, and a splash of water and toss the tofu until glazed.
- Finish with lime juice and scallions and serve over the jasmine rice.
