Vietnamese Chicken Curry

Ingredients
- 2.5 lb bone-in chicken thighs
- 27 oz coconut milk
- 3 yukon gold potatoes
- 3 carrots
- 2 lemongrass stalks
- 2 tbsp curry powder
- 1 onion
- 4 garlic cloves
- 3 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp neutral oil
- 4 cups cooked jasmine rice
How to cook it
- Toss the chicken with 1 tbsp curry powder and a pinch of salt and let it sit 15 minutes.
- Heat the oil in a pot and brown the chicken on all sides, then set it aside.
- Cook the onion, garlic, and bruised lemongrass until fragrant, then stir in the remaining curry powder.
- Return the chicken, pour in the coconut milk with a cup of water, and simmer 15 minutes.
- Add the potatoes and carrots and simmer until the chicken and vegetables are tender, about 20 minutes.
- Season with the fish sauce and sugar and serve over the jasmine rice.
