Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 12 oz rice vermicelli
  • 2 lemongrass stalks
  • 4 garlic cloves
  • 1/4 cup fish sauce
  • 3 tbsp sugar
  • 3 tbsp lime juice
  • 1 cucumber
  • 1.5 cups shredded carrots
  • 2 cups fresh herbs
  • 1/3 cup chopped peanuts
  • 2 tbsp neutral oil

How to cook it

  1. Marinate the chicken with the minced lemongrass, garlic, 2 tbsp fish sauce, and 1 tbsp sugar for 20 minutes.
  2. Whisk the remaining fish sauce, sugar, lime juice, and 3/4 cup warm water into a dressing.
  3. Soak the rice vermicelli in hot water until tender, then drain and divide among four bowls.
  4. Heat the oil in a skillet over medium-high and cook the chicken until caramelized and cooked through, about 12 minutes, then slice.
  5. Top the noodles with the sliced chicken, cucumber, carrots, and herbs.
  6. Spoon the dressing over each bowl and finish with chopped peanuts.
