Chicken Banh Mi

Ingredients
- 4 baguette rolls
- 1 lb boneless skinless chicken thighs
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 2 carrots
- 1 daikon
- 1/2 cup rice vinegar
- 1 cucumber
- 1 cup cilantro sprigs
- 2 jalapenos
- 1/4 cup mayonnaise
- 1 tbsp neutral oil
How to cook it
- Toss the julienned carrot and daikon with the rice vinegar and 1 tsp sugar and let pickle at least 20 minutes.
- Marinate the sliced chicken in the fish sauce and remaining brown sugar for 15 minutes.
- Heat the oil in a skillet over medium-high and cook the chicken until caramelized and cooked through, about 6 minutes.
- Split the baguettes and spread with mayonnaise.
- Fill with the chicken, drained pickles, cucumber, cilantro, and jalapeno.
