Ingredients

  • 8 large eggs
  • 1 onion
  • 1 tomato
  • 2 green chilies
  • 1/4 cup chopped cilantro
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 2 tbsp neutral oil

How to cook it

  1. Beat the eggs with the turmeric, cumin, and salt.
  2. Stir in the onion, tomato, green chilies, and cilantro.
  3. Heat 1/2 tbsp oil in a nonstick skillet over medium heat.
  4. Pour in a quarter of the mixture, spread it out, and cook until the underside is set, about 2 minutes; fold and cook 1 minute more.
  5. Repeat to make four omelettes and serve hot.
