Ingredients

  • 6 bell peppers
  • 1.5 cups rice
  • 1 onion
  • 3 garlic cloves
  • 3 tomatoes
  • 2 tbsp tomato paste
  • 1/3 cup olive oil
  • 1/3 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 tsp salt

How to cook it

  1. Heat the oven to 375F.
  2. Slice the tops off the bell peppers and scoop out the seeds, reserving the tops.
  3. Cook the onion and garlic in 2 tbsp olive oil until soft, then stir in the grated tomatoes, tomato paste, rice, parsley, mint, and salt and cook 5 minutes.
  4. Spoon the rice mixture into the peppers, filling them three-quarters full, and set the tops back on.
  5. Stand the peppers in a baking dish, add a splash of water, and drizzle with the remaining olive oil.
  6. Cover with foil and bake 45 minutes, then uncover and bake until the peppers are tender and the rice is cooked, about 15 minutes more.
