Vegetarian Stuffed Peppers

Ingredients
- 6 bell peppers
- 1.5 cups rice
- 1 onion
- 3 garlic cloves
- 3 tomatoes
- 2 tbsp tomato paste
- 1/3 cup olive oil
- 1/3 cup chopped parsley
- 1/4 cup chopped mint
- 1 tsp salt
How to cook it
- Heat the oven to 375F.
- Slice the tops off the bell peppers and scoop out the seeds, reserving the tops.
- Cook the onion and garlic in 2 tbsp olive oil until soft, then stir in the grated tomatoes, tomato paste, rice, parsley, mint, and salt and cook 5 minutes.
- Spoon the rice mixture into the peppers, filling them three-quarters full, and set the tops back on.
- Stand the peppers in a baking dish, add a splash of water, and drizzle with the remaining olive oil.
- Cover with foil and bake 45 minutes, then uncover and bake until the peppers are tender and the rice is cooked, about 15 minutes more.
