Vegetable Fried Rice (Indo-Chinese Style)

Ingredients
- 5 cups cooked rice (day-old)
- 1 carrot
- 1 cup green beans
- 1.5 cups cabbage
- 1 bell pepper
- 4 spring onions
- 5 garlic cloves
- 1 tbsp grated ginger
- 3 tbsp soy sauce
- 1 tsp rice vinegar
- 1/2 tsp white pepper
- 3 tbsp neutral oil
- 1/2 tsp salt
How to cook it
- Finely chop all the vegetables so they cook quickly and evenly.
- Heat the oil in a wok over high heat and fry the garlic and ginger for a few seconds until fragrant.
- Add the carrot, beans, cabbage, and bell pepper and stir fry on high heat for 3 minutes so they stay crisp.
- Add the cooked rice, soy sauce, rice vinegar, white pepper, and salt and toss everything together over high heat for 3 minutes.
- Stir through the spring onions and serve hot.
