Chana Masala

Ingredients
- 30 oz canned chickpeas
- 1 onion
- 14 oz crushed tomatoes
- 4 garlic cloves
- 1 tbsp grated ginger
- 2 tsp garam masala
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne
- 3 tbsp neutral oil
- 1/4 cup chopped cilantro
- 2 cups basmati rice
- 1 tsp salt
How to cook it
- Heat the oil in a pot and cook the onion until deeply golden, about 8 minutes.
- Add the garlic, ginger, garam masala, cumin, coriander, turmeric, and cayenne and cook until fragrant, 1 minute.
- Stir in the crushed tomatoes and simmer 5 minutes.
- Add the chickpeas and 1/2 cup water and simmer until thick, about 15 minutes, then season with salt.
- Stir in the cilantro and serve over basmati rice.
