Cabbage Sabzi (Patta Gobi)
Cabbage Sabzi (Patta Gobi) is North Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre and the cooked vegetable. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1 small cabbage
- 1 cup green peas
- 1 onion
- 2 green chilies
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp ground coriander
- 3 tbsp neutral oil
- 3 tbsp chopped cilantro
- 3/4 tsp salt
How to cook it
- Core and finely shred the cabbage and thinly slice the onion.
- Heat the oil in a wide pan and let the cumin seeds sizzle, then add the slit green chilies and onion and cook until soft, about 4 minutes.
- Stir in the turmeric and coriander, then add the cabbage and peas and season with salt.
- Toss over medium-high heat until the cabbage wilts and turns tender but still has a little bite, about 10 minutes.
- Finish with cilantro and serve hot with roti or dal.
Serve it with

When to cook it
Cabbage Sabzi (Patta Gobi) takes about 25 minutes from a cold stove to the table, and the cooking itself is easy going. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
