Chole Rice Bowl

Ingredients

  • 1.5 cups chickpeas (chana)
  • 4 cups cooked rice
  • 2 onion
  • 3 tomato
  • 5 garlic cloves
  • 1 tbsp grated ginger
  • 2 green chilies
  • 1 tsp cumin seeds
  • 2 tsp chole masala
  • 1 tsp ground coriander
  • 1 tsp red chili powder
  • 1/2 tsp turmeric
  • 4 tbsp neutral oil
  • 1/4 cup chopped cilantro
  • 1 tsp salt

How to cook it

  1. Soak the chickpeas overnight, then pressure cook them with the salt and water until soft.
  2. Heat the oil and let the cumin seeds sizzle, then cook the onion, garlic, ginger, and green chilies until golden.
  3. Stir in the pureed tomato, chole masala, coriander, red chili powder, and turmeric and cook until thick.
  4. Add the cooked chickpeas with their liquid, mash a few, and simmer for 15 minutes until rich.
  5. Spoon the chole over warm rice, top with cilantro, and serve.
