Butter Chicken

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 1/2 cup plain yogurt
  • 4 tbsp butter
  • 28 oz crushed tomatoes
  • 3/4 cup heavy cream
  • 1/3 cup raw cashews
  • 1 onion
  • 5 garlic cloves
  • 1 tbsp grated ginger
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tbsp paprika
  • 4 cups cooked basmati rice
  • 1 tsp salt

How to cook it

  1. Toss the chicken with the yogurt, half the garam masala, and half the salt and let it sit 15 minutes while you prep.
  2. Soak the cashews in hot water for 10 minutes, then blend them smooth with a splash of the soaking water.
  3. Melt 2 tbsp butter in a large skillet over medium heat and brown the marinated chicken in batches, then set it aside.
  4. In the same pan cook the onion, garlic, and ginger until soft, about 6 minutes, then stir in the cumin, paprika, and remaining garam masala.
  5. Pour in the crushed tomatoes and simmer 10 minutes, then blend the sauce smooth and return it to the pan.
  6. Stir in the cashew cream, heavy cream, and remaining butter, return the chicken with its juices, and simmer until cooked through, about 8 minutes.
  7. Season with the remaining salt and serve over the basmati rice.
