Spanakopita Dinner

Ingredients
- 1 lb phyllo dough
- 20 oz frozen spinach
- 2 cups crumbled feta
- 3 large eggs
- 1 onion
- 4 scallions
- 1/4 cup olive oil
- 4 tbsp butter
- 1/3 cup chopped dill
- 1/2 tsp salt
How to cook it
- Heat the oven to 375F.
- Thaw the spinach and squeeze out all of the water.
- Cook the onion in a little olive oil until soft, then mix it with the spinach, feta, beaten eggs, scallions, dill, and salt.
- Brush a baking dish with melted butter and layer in half the phyllo sheets, brushing each with butter or olive oil.
- Spread the spinach filling evenly over the phyllo.
- Top with the remaining phyllo sheets, brushing each with butter, and score the top into squares.
- Bake until the phyllo is deep golden and crisp, about 45 minutes, then cool 10 minutes before cutting.
