Loaded Ramen Bowl

Ingredients
- 4 3 oz packages instant ramen noodles
- 6 cups vegetable broth
- 3 tbsp white miso paste
- 2 tbsp soy sauce
- 4 garlic cloves
- 1 tbsp grated ginger
- 6 oz shiitake mushrooms
- 4 baby bok choy
- 4 soft-boiled eggs
- 3 scallions
- 1 tbsp toasted sesame oil
- 1 tbsp sesame seeds
How to cook it
- Discard the ramen seasoning packets, as this broth stands on its own.
- Warm the sesame oil in a pot over medium and cook the garlic, ginger, and sliced shiitakes until fragrant, about 4 minutes.
- Pour in the broth and soy sauce and bring to a gentle simmer, then whisk in the miso paste until dissolved without boiling it hard.
- Add the halved bok choy and simmer until just tender, about 3 minutes.
- Cook the ramen noodles in the broth until loosened and tender, about 3 minutes.
- Divide among bowls and top each with a halved soft-boiled egg, scallions, and sesame seeds.
