Ingredients
- 1.25 lb boneless skinless chicken thighs
- 4 cups cooked white rice
- 4 cups broccoli florets
- 2 carrots
- 1/4 cup gluten-free tamari
- 3 garlic cloves
- 1 tbsp grated ginger
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp neutral oil
- 3 scallions
How to cook it
- Whisk the tamari, garlic, ginger, rice vinegar, and sesame oil into a sauce.
- Heat 1 tbsp neutral oil in a large skillet over medium-high and cook the bite-size chicken until browned and cooked through, about 8 minutes; remove.
- Add the remaining oil and stir-fry the broccoli and carrots until crisp-tender, about 5 minutes.
- Return the chicken, pour in the sauce, and toss to coat and glaze, about 2 minutes.
- Divide the rice among four bowls and top with the chicken and vegetables.
- Scatter with sliced scallions and serve.
