Vegetable Miso Ramen Bowl

Ingredients
- 1 lb fresh ramen noodles
- 1/3 cup white miso paste
- 2 tbsp soy sauce
- 8 cups vegetable broth
- 8 oz shiitake mushrooms
- 3 garlic cloves
- 1 tbsp grated ginger
- 1 tbsp sesame oil
- 4 baby bok choy
- 1 cup corn kernels
- 2 cups bean sprouts
- 4 scallions
- 1 tbsp sesame seeds
How to cook it
- Heat the sesame oil in a pot and cook the garlic, ginger, and sliced mushrooms until softened, about 5 minutes.
- Add the vegetable broth and soy sauce and bring to a simmer.
- Whisk the miso with a ladle of hot broth until smooth, then stir it back into the pot without boiling.
- Add the bok choy and corn and simmer until the greens wilt, about 3 minutes.
- Cook the ramen noodles separately until tender, then divide among four bowls.
- Ladle the broth and vegetables over the noodles and top with bean sprouts, scallions, and sesame seeds.
