Ingredients

  • 12 oz fresh ramen noodles
  • 6 cups vegetable broth
  • 3 tbsp white miso paste
  • 2 tbsp soy sauce
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 6 oz shiitake mushrooms
  • 2 baby bok choy
  • 4 large eggs
  • 1 cup corn kernels
  • 4 scallions
  • 1 tbsp sesame oil
  • 2 nori sheets

How to cook it

  1. Soft-boil the eggs for 7 minutes, then chill in ice water, peel, and halve.
  2. Warm the sesame oil in a pot and cook the garlic, ginger, and sliced shiitakes until fragrant, about 3 minutes.
  3. Add the broth and bring to a simmer, then whisk in the miso and soy sauce off a full boil to keep it smooth.
  4. Add the halved bok choy and corn and simmer until tender, about 3 minutes.
  5. Cook the ramen noodles separately per the package, then divide among bowls and ladle the broth and vegetables over.
  6. Top each bowl with a soft egg, scallions, and strips of nori.
