Japanese Vegetable Curry

Ingredients

  • 1 onion
  • 3 carrots
  • 2 russet potatoes
  • 8 oz cremini mushrooms
  • 3 tbsp curry powder
  • 3 tbsp all-purpose flour
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
  • 4 cups vegetable broth
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 1 cup frozen peas
  • 2 tbsp neutral oil
  • 5 cups cooked white rice

How to cook it

  1. Heat the oil in a pot and cook the onion, garlic, and ginger until soft, about 5 minutes.
  2. Add the carrots, potatoes, and mushrooms and stir for 3 minutes.
  3. Sprinkle in the curry powder and flour and stir until the vegetables are coated, about 1 minute.
  4. Pour in the broth, soy sauce, and ketchup and simmer until the potatoes are tender and the sauce thickens, about 20 minutes.
  5. Stir in the peas and cook 3 minutes more.
  6. Serve the curry over bowls of warm rice.
