Lamb and Chickpea Stew

Ingredients

  • 1.5 lb lamb stew meat
  • 2 cups canned chickpeas
  • 1 onion
  • 4 garlic cloves
  • 15 oz crushed tomatoes
  • 2 carrots
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 3 cups chicken broth
  • 1/4 cup chopped cilantro
  • 1.5 tsp salt

How to cook it

  1. Season the lamb with the salt.
  2. Heat the olive oil in a heavy pot over medium-high and brown the lamb in batches, then remove it.
  3. Soften the onion, garlic, and carrots in the same pot, about 6 minutes, then stir in the cumin, coriander, and cinnamon.
  4. Return the lamb, add the crushed tomatoes, chickpeas, and broth, and bring to a simmer.
  5. Cover and cook gently until the lamb is fork-tender, about 70 minutes.
  6. Stir in the cilantro and adjust the salt before serving.
