Ingredients
- 1 lb dried black-eyed peas
- 1 onion
- 2 celery stalks
- 1 green bell pepper
- 4 garlic cloves
- 1.5 cups long-grain rice
- 5 cups vegetable broth
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- 3 green onions
- 1 tsp salt
- 1/2 tsp black pepper
How to cook it
- Soak the black-eyed peas for a few hours or overnight, then drain.
- Heat the olive oil in a pot and soften the onion, celery, bell pepper, and garlic, about 6 minutes.
- Add the peas, smoked paprika, thyme, bay leaf, and broth, and simmer until the peas are just tender, about 30 minutes.
- Stir in the rice, cover, and cook until the rice is tender and the liquid is absorbed, about 20 minutes.
- Season with salt and pepper and discard the bay leaf.
- Fluff with a fork, top with sliced green onions, and serve.
