Chicken and Dumplings

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 3 tbsp butter
  • 1 onion
  • 3 carrots
  • 3 celery stalks
  • 3 garlic cloves
  • 3 tbsp all-purpose flour
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup frozen peas
  • 2 cups all-purpose flour for dumplings
  • 1 tbsp baking powder
  • 4 tbsp butter for dumplings
  • 3/4 cup whole milk
  • 1.5 tsp salt

How to cook it

  1. Melt the butter in a large pot over medium and cook the onion, carrots, celery, and garlic until soft, about 7 minutes.
  2. Sprinkle in the 3 tbsp flour for 1 minute, then whisk in the broth, thyme, bay leaf, and 1 tsp salt.
  3. Add the chicken thighs, bring to a simmer, and cook until tender, about 15 minutes, then remove, shred, and return the meat with the peas.
  4. For the dumplings, cut the 4 tbsp butter into the 2 cups flour, baking powder, and remaining salt, then stir in the milk to make a soft dough.
  5. Drop spoonfuls of dough over the simmering stew, cover tightly, and cook without lifting the lid until the dumplings are puffed and cooked through, about 15 minutes.
  6. Discard the bay leaf and serve in deep bowls.
