Shrimp and Sausage Jambalaya

Ingredients
- 12 oz andouille sausage
- 1 lb boneless skinless chicken thighs
- 1 lb large shrimp
- 2 tbsp olive oil
- 1 onion
- 2 celery stalks
- 1 green bell pepper
- 4 garlic cloves
- 2 cups long-grain white rice
- 14 oz diced tomatoes
- 3.5 cups chicken broth
- 1 tbsp cajun seasoning
- 1 tsp smoked paprika
- 2 bay leaves
- 1 tsp dried thyme
- 1 tbsp hot sauce
- 3 scallions
- 1 tsp salt
How to cook it
- Heat the olive oil in a heavy pot over medium-high and brown the sliced sausage and the diced chicken, then set them aside.
- Add the onion, celery, bell pepper, and garlic and cook until soft, about 6 minutes.
- Stir in the rice, cajun seasoning, smoked paprika, and thyme to toast for 1 minute.
- Return the sausage and chicken, then add the diced tomatoes, broth, bay leaves, and salt and bring to a boil.
- Cover and simmer over low heat until the rice is nearly tender, about 20 minutes, then nestle in the shrimp and cook until pink, about 6 minutes.
- Discard the bay leaves, stir in the hot sauce, and top with scallions to serve.
