Chicken and Sausage Gumbo

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 12 oz andouille sausage
  • 1.5 lb boneless skinless chicken thighs
  • 1 onion
  • 2 celery stalks
  • 1 green bell pepper
  • 4 garlic cloves
  • 2 cups okra
  • 6 cups chicken broth
  • 1 tbsp cajun seasoning
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp cayenne
  • 2 cups long-grain white rice
  • 3 scallions
  • 1 tsp salt

How to cook it

  1. Whisk the oil and flour together in a heavy pot over medium heat and cook, stirring constantly, until the roux turns a deep chocolate brown, about 25 minutes.
  2. Add the onion, celery, bell pepper, and garlic and cook until softened, about 6 minutes.
  3. Stir in the sliced sausage, cajun seasoning, thyme, cayenne, and bay leaves, then slowly whisk in the broth.
  4. Add the chicken thighs and okra, bring to a boil, then simmer gently until the chicken is tender, about 45 minutes.
  5. Remove the chicken, shred it, return it to the pot, season with the salt, and simmer 10 minutes more.
  6. Cook the rice separately and serve the gumbo ladled over the rice with scallions on top.
