Cajun Jambalaya

Ingredients
- 12 oz andouille sausage
- 1 lb boneless skinless chicken thighs
- 1 lb large shrimp
- 2 cups long-grain rice
- 14 oz diced tomatoes
- 1 onion
- 1 bell pepper
- 2 celery stalks
- 4 garlic cloves
- 3.5 cups chicken broth
- 2 tbsp Cajun seasoning
- 1 bay leaf
- 2 tbsp neutral oil
- 3 scallions
- 1/2 tsp salt
How to cook it
- Heat the oil in a large pot and brown the sliced andouille and chicken pieces, about 6 minutes, then remove.
- Cook the onion, bell pepper, celery, and garlic in the drippings until soft, about 6 minutes.
- Stir in the Cajun seasoning and rice and toast 1 minute.
- Add the diced tomatoes, broth, bay leaf, and the browned sausage and chicken, and bring to a boil.
- Cover and simmer until the rice is tender and the liquid is absorbed, about 22 minutes.
- Stir in the shrimp, cover, and cook until pink, about 5 minutes, then fold in the scallions and season with salt.
