Red Beans and Rice

Red Beans and Rice is Southern home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

130 min Medium High fiber Dairy free

Ingredients

  • 1 lb dried red kidney beans
  • 12 oz andouille sausage
  • 1 tbsp olive oil
  • 1 onion
  • 2 celery stalks
  • 1 green bell pepper
  • 4 garlic cloves
  • 1 tbsp cajun seasoning
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 cups long-grain white rice
  • 1 tbsp hot sauce
  • 3 scallions
  • 1 tsp salt

How to cook it

  1. Soak the kidney beans in plenty of cold water overnight, then drain and rinse.
  2. Heat the olive oil in a heavy pot over medium and brown the sliced sausage, then add the onion, celery, bell pepper, and garlic and cook 6 minutes.
  3. Stir in the cajun seasoning, smoked paprika, bay leaves, and thyme, then add the beans and enough water to cover by 2 inches.
  4. Bring to a boil, reduce to a low simmer, and cook until the beans are creamy, about 90 minutes, adding water as needed.
  5. Mash some of the beans against the side of the pot to thicken, then season with the hot sauce and salt.
  6. Meanwhile cook the rice separately, then spoon the beans over the rice and top with scallions.

A Southern dinner is a plate rather than a single dish. These are the courses that normally sit beside Red Beans and Rice, read from the same composition Dinejot builds a real meal from.

When to cook it

Red Beans and Rice takes about 130 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
