- 1.5 lb boneless skinless chicken thighs
- 1.5 cups buttermilk
- 3 tbsp hot sauce
- 2 cups all-purpose flour
- 2 large eggs
- 3 tbsp cayenne
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp paprika
- 4 cups neutral oil
- 4 brioche buns
- 1/2 cup dill pickle chips
- 1.5 tsp salt
- 1 tsp black pepper
How to cook it
- Whisk the buttermilk, hot sauce, and 1 tsp salt in a bowl, add the chicken, and let it brine for at least 30 minutes.
- Whisk the flour, garlic powder, paprika, the remaining salt, and the black pepper in a shallow dish, and beat the eggs in a second dish.
- Heat 2 inches of the neutral oil in a heavy pot to 350F.
- Lift each piece from the brine, dredge in the seasoned flour, dip in the egg, and dredge again, pressing to coat.
- Fry the chicken in batches until deep golden and cooked through to 165F, about 6 minutes, then drain on a rack.
- Whisk the cayenne, brown sugar, and 1/2 cup of the hot frying oil into a fiery paste and brush it over the fried chicken.
- Pile the chicken onto the brioche buns with dill pickle chips and serve.
