Catfish Po-Boy

Ingredients
- 1.5 lb catfish fillets
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 cup buttermilk
- 1 large egg
- 1 tbsp Cajun seasoning
- 4 baguette rolls
- 1/3 cup mayonnaise
- 1/2 cup dill pickles
- 1 tbsp hot sauce
- 2 cups shredded lettuce
- 2 tomatoes
- 3 cups neutral oil
- 1/2 tsp salt
- 1/2 tsp black pepper
How to cook it
- Cut the catfish into 4 portions and soak in the buttermilk whisked with the beaten egg for 10 minutes.
- Combine the cornmeal, flour, Cajun seasoning, salt, and pepper in a shallow dish.
- Heat 1 inch of neutral oil in a skillet to 350F.
- Lift each fillet from the buttermilk, dredge thoroughly in the cornmeal mixture, and fry until golden and crisp, about 3 minutes per side, then drain.
- Stir the mayonnaise with the chopped pickles and hot sauce into a quick remoulade.
- Split and toast the baguette rolls and spread with the remoulade.
- Build the po-boys with the fried catfish, shredded lettuce, and sliced tomato and serve.
