Grilled Halloumi Plate

Ingredients
- 1 lb halloumi
- 2 cups cherry tomatoes
- 1 cucumber
- 3 tbsp olive oil
- 1 lemon
- 1/4 cup chopped mint
- 1 tsp dried oregano
- 6 cups mixed salad greens
- 1/2 tsp salt
How to cook it
- Slice the halloumi into thick slabs and pat them dry.
- Heat a grill pan over medium-high and brush it with a little olive oil.
- Grill the halloumi until golden grill marks form, about 2 minutes per side.
- Toss the salad greens, halved cherry tomatoes, and sliced cucumber with the remaining olive oil, lemon juice, oregano, and salt.
- Arrange the grilled halloumi over the salad.
- Scatter with mint and serve right away while the cheese is warm.
