Ingredients

  • 1 lb halloumi
  • 2 cups cherry tomatoes
  • 1 cucumber
  • 3 tbsp olive oil
  • 1 lemon
  • 1/4 cup chopped mint
  • 1 tsp dried oregano
  • 6 cups mixed salad greens
  • 1/2 tsp salt

How to cook it

  1. Slice the halloumi into thick slabs and pat them dry.
  2. Heat a grill pan over medium-high and brush it with a little olive oil.
  3. Grill the halloumi until golden grill marks form, about 2 minutes per side.
  4. Toss the salad greens, halved cherry tomatoes, and sliced cucumber with the remaining olive oil, lemon juice, oregano, and salt.
  5. Arrange the grilled halloumi over the salad.
  6. Scatter with mint and serve right away while the cheese is warm.
