Aam Khatta (Odia Raw Mango Relish)

Ingredients
- 2 raw green mango, peeled and chopped
- 1 tbsp mustard oil
- 1/4 tsp mustard seeds
- 1/4 tsp fenugreek seeds
- 1 dried red chili
- 1/4 tsp turmeric
- 3 tbsp jaggery
- 1/2 tsp salt
- 1 cup water
How to cook it
- Heat the mustard oil in a pan and temper with the mustard seeds, fenugreek seeds, and dried red chili until they crackle.
- Add the chopped raw mango and turmeric and stir for a minute.
- Pour in the water, cover, and simmer until the mango turns soft and pulpy, about 10 minutes.
- Mash the mango lightly with the back of a spoon, then stir in the jaggery and salt.
- Simmer a few minutes more until the relish thickens slightly and turns glossy.
- Cool and serve alongside pakhala, dalma, or plain rice.
