Xaak Bhaji (Stir-fried Mustard Greens)

Ingredients
- 6 cups mustard greens
- 1 tbsp mustard oil
- 2 garlic cloves
- 1 dried red chili
- 1/2 tsp salt
How to cook it
- Wash the mustard greens well and chop them roughly, stems and all.
- Heat the mustard oil in a wide pan until it just starts to smoke, then let it cool a moment to take the rawness off.
- Crush the garlic and drop it in with the dried chili, stirring for a few seconds until fragrant.
- Add the greens straight in with the water still clinging to the leaves and the salt, and cover.
- Cook over medium heat, stirring occasionally, until the greens wilt down and turn tender, about 10 minutes.
- Uncover and cook off any extra water for the last couple of minutes, then serve warm with rice.
