Ingredients

  • 2 cups long-grain rice
  • 15 oz canned black beans
  • 1.5 cups corn kernels
  • 2 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 2 avocados
  • 1/2 red onion
  • 1 bell pepper
  • 2 limes
  • 1/2 cup chopped cilantro
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 3 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Cook the rice and fold in the juice of one lime and half the cilantro.
  2. Warm the black beans and corn with the chili powder, cumin, and salt in a small pot.
  3. Heat the olive oil in a skillet and char the sliced bell pepper until tender, about 5 minutes.
  4. Divide the rice among four bowls.
  5. Top each with beans, corn, charred pepper, romaine, halved tomatoes, and sliced avocado.
  6. Finish with red onion, remaining cilantro, and lime wedges.
