Cheese Enchiladas

Ingredients

  • 12 corn tortillas
  • 3 cups shredded cheddar
  • 1 cup shredded Monterey Jack
  • 3 cups red enchilada sauce
  • 1 onion
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 1/2 cup sour cream
  • 2 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Heat the oven to 375F and spread a thin layer of enchilada sauce in a baking dish.
  2. Soften the finely chopped onion and garlic in the olive oil with the cumin and salt, about 5 minutes.
  3. Combine most of the cheddar and Monterey Jack with the softened onion for the filling.
  4. Warm the corn tortillas, fill each with the cheese mixture, roll, and set seam-side down in the dish.
  5. Pour the remaining sauce over the top and scatter with the rest of the cheese.
  6. Bake until bubbling and melted, about 20 minutes, then serve with sour cream.
