Vegetable Lo Mein

Ingredients

  • 1 lb fresh wheat lo mein noodles
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 2 carrots
  • 3 cups napa cabbage
  • 6 oz shiitake mushrooms
  • 2 cups snap peas
  • 4 scallions
  • 1 tsp sugar
  • 2 tbsp neutral oil

How to cook it

  1. Boil the lo mein noodles until just tender, then drain.
  2. Stir the soy sauce, hoisin, sesame oil, and sugar together for the sauce.
  3. Heat the neutral oil in a wok over high heat and stir-fry the garlic, ginger, carrots, and mushrooms for 3 minutes.
  4. Add the cabbage and snap peas and stir-fry until crisp-tender, about 3 minutes.
  5. Add the noodles and sauce and toss until hot and evenly coated, about 2 minutes.
  6. Stir in the scallions and serve.
