Chicken Stir-Fry

Ingredients
- 1.5 lb chicken breast
- 4 cups broccoli florets
- 1 bell pepper
- 2 carrots
- 4 garlic cloves
- 1 tbsp grated ginger
- 1/3 cup soy sauce
- 2 tbsp cornstarch
- 1 tbsp sesame oil
- 2 tbsp neutral oil
- 2 cups cooked rice
How to cook it
- Toss the sliced chicken with 1 tbsp cornstarch.
- Whisk the soy sauce, remaining cornstarch, sesame oil, and 1/3 cup water for the sauce.
- Heat 1 tbsp neutral oil in a wok over high heat and stir-fry the chicken until browned and cooked, about 5 minutes, then remove.
- Add the remaining oil and stir-fry the broccoli, bell pepper, carrots, garlic, and ginger until crisp-tender, about 5 minutes.
- Return the chicken, pour in the sauce, and toss until thickened and glossy, about 2 minutes.
- Serve over rice.
