Chicken Lo Mein

Ingredients

  • 1 lb fresh wheat lo mein noodles
  • 1 lb chicken breasts
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 2 carrots
  • 3 cups napa cabbage
  • 1 bell pepper
  • 4 scallions
  • 1 tsp sugar
  • 2 tbsp neutral oil

How to cook it

  1. Boil the lo mein noodles until just tender, then drain and toss with a little sesame oil.
  2. Stir the soy sauce, oyster sauce, remaining sesame oil, and sugar together for the sauce.
  3. Heat the neutral oil in a wok over high heat and stir-fry the sliced chicken until cooked through, about 5 minutes.
  4. Add the garlic, ginger, carrots, cabbage, and bell pepper and stir-fry until crisp-tender, about 4 minutes.
  5. Add the noodles and sauce and toss until everything is coated and hot, about 2 minutes.
  6. Stir in the scallions and serve.
