Char Siu Style Pork

Char Siu Style Pork is Chinese home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

60 min Medium Dairy free

Ingredients

  • 2 lb pork shoulder
  • 1/4 cup hoisin sauce
  • 3 tbsp soy sauce
  • 1/4 cup honey
  • 1 tsp five-spice powder
  • 4 garlic cloves
  • 1 tbsp grated ginger
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 4 cups cooked white rice

How to cook it

  1. Cut the pork into long strips about 2 inches thick.
  2. Whisk the hoisin, soy sauce, half the honey, five-spice, garlic, ginger, sesame oil, and rice vinegar, then coat the pork and marinate at least 20 minutes.
  3. Heat the oven to 400F and set the pork on a rack over a foil-lined pan.
  4. Roast for 25 minutes, then brush with the remaining honey and roast until caramelized and 145F inside, about 15 minutes more.
  5. Rest the pork 5 minutes, then slice against the grain.
  6. Serve over the warm rice with any pan juices spooned over.

Serve it with

A Chinese dinner is a plate rather than a single dish. These are the courses that normally sit beside Char Siu Style Pork, read from the same composition Dinejot builds a real meal from.

When to cook it

Char Siu Style Pork takes about 60 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
