Ingredients

  • 1.25 lb ground turkey
  • 2 heads butter lettuce
  • 8 oz canned water chestnuts
  • 2 carrots
  • 3 tbsp gluten-free tamari
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 1 tbsp toasted sesame oil
  • 1 tbsp neutral oil
  • 3 scallions

How to cook it

  1. Whisk the tamari, rice vinegar, brown sugar, and sesame oil into a sauce.
  2. Heat the neutral oil in a skillet over medium-high and cook the ground turkey, breaking it up, until browned, about 6 minutes.
  3. Add the garlic, ginger, and chopped water chestnuts and cook 2 minutes.
  4. Pour in the sauce and cook until glossy and the liquid has mostly cooked off, about 3 minutes.
  5. Separate the butter lettuce into cups and shred the carrots.
  6. Spoon the turkey into the lettuce cups, top with carrot and sliced scallions, and serve.
