Congee with Scallions

Ingredients
- 1 cup jasmine rice
- 8 cups vegetable broth
- 1 tbsp grated ginger
- 4 scallions
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp white pepper
- 4 soft-boiled eggs
How to cook it
- Rinse the rice until the water runs clear.
- Combine the rice, broth, and ginger in a pot and bring to a boil.
- Reduce to a low simmer and cook, stirring occasionally, until the rice breaks down into a thick porridge, about 45 minutes.
- Stir in the soy sauce, sesame oil, and white pepper.
- Ladle into bowls and top each with a halved soft-boiled egg and plenty of scallions.
