Tuscan White Bean Stew

Ingredients

  • 30 oz cannellini beans
  • 4 cups kale
  • 1 carrot
  • 2 celery stalks
  • 1 onion
  • 4 garlic cloves
  • 15 oz crushed tomatoes
  • 4 cups vegetable broth
  • 3 tbsp olive oil
  • 1 tbsp fresh rosemary
  • 1 tsp fresh sage
  • 3/4 tsp salt

How to cook it

  1. Heat the olive oil in a large pot and soften the carrot, celery, onion, and garlic, about 6 minutes.
  2. Stir in the rosemary and sage until fragrant, 1 minute.
  3. Add the crushed tomatoes and vegetable broth and bring to a simmer.
  4. Add the drained cannellini beans and simmer until the stew thickens, about 20 minutes.
  5. Mash some of the beans against the side of the pot to thicken the broth.
  6. Stir in the chopped kale and cook until tender, about 5 minutes.
  7. Season with salt and serve.
