Tonkatsu Pork Cutlet

Ingredients

  • 4 boneless pork loin chops
  • 2 cups panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 4 cups green cabbage
  • 1 cup neutral oil
  • 1/2 tsp salt
  • 4 cups cooked white rice

How to cook it

  1. Pound the pork chops to an even thickness and season with the salt.
  2. Stir the ketchup, soy sauce, sugar, and rice vinegar into a quick tonkatsu sauce.
  3. Dredge each chop in the flour, then the beaten eggs, then the panko, pressing to coat.
  4. Heat the oil to 350F and fry the pork until deep golden and cooked through, about 4 minutes per side, then drain.
  5. Slice the cutlets into strips and pile the finely shredded cabbage alongside.
  6. Serve with the rice and the tonkatsu sauce spooned over.
