Ingredients
- 1.5 lb boneless skinless chicken thighs
- 3 tbsp red curry paste
- 27 oz coconut milk
- 1 red bell pepper
- 1 cup bamboo shoots
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup Thai basil leaves
- 1 lime
- 1 tbsp neutral oil
- 4 cups cooked jasmine rice
How to cook it
- Spoon the thick top layer of one can of coconut milk into a pot and heat it with the curry paste until fragrant and darkened, about 3 minutes.
- Add the sliced chicken and stir to coat in the paste, cooking for 4 minutes.
- Pour in the remaining coconut milk, fish sauce, and brown sugar and bring to a gentle simmer.
- Add the sliced bell pepper and bamboo shoots and simmer until the chicken is cooked and the peppers are tender, about 12 minutes.
- Stir in the Thai basil and a squeeze of lime.
- Serve over the jasmine rice.
