Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 3 tbsp red curry paste
  • 27 oz coconut milk
  • 1 red bell pepper
  • 1 cup bamboo shoots
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup Thai basil leaves
  • 1 lime
  • 1 tbsp neutral oil
  • 4 cups cooked jasmine rice

How to cook it

  1. Spoon the thick top layer of one can of coconut milk into a pot and heat it with the curry paste until fragrant and darkened, about 3 minutes.
  2. Add the sliced chicken and stir to coat in the paste, cooking for 4 minutes.
  3. Pour in the remaining coconut milk, fish sauce, and brown sugar and bring to a gentle simmer.
  4. Add the sliced bell pepper and bamboo shoots and simmer until the chicken is cooked and the peppers are tender, about 12 minutes.
  5. Stir in the Thai basil and a squeeze of lime.
  6. Serve over the jasmine rice.
