Ingredients

  • 14 oz wide rice noodles
  • 1 lb boneless skinless chicken thighs
  • 1 bunch Chinese broccoli
  • 3 large eggs
  • 4 garlic cloves
  • 2 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 3 tbsp neutral oil

How to cook it

  1. Soak the wide rice noodles in hot water until pliable, then drain.
  2. Stir the dark soy, light soy, oyster sauce, and brown sugar together in a small bowl.
  3. Heat 1 tbsp oil in a wok over high heat and stir-fry the sliced chicken and garlic until cooked, about 5 minutes, then push it aside.
  4. Crack in the eggs and scramble briefly, then add the chopped Chinese broccoli stems and leaves and stir-fry 2 minutes.
  5. Add the noodles and the sauce and toss over high heat until the noodles pick up color and char slightly, about 3 minutes.
  6. Divide among plates and serve hot.
