Ingredients

  • 12 oz rice noodles
  • 1/3 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 limes
  • 1 tbsp brown sugar
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 1 tbsp sriracha
  • 2 carrots
  • 1 red bell pepper
  • 1 cup shelled edamame
  • 4 scallions
  • 1/4 cup crushed peanuts
  • 1 tbsp sesame oil

How to cook it

  1. Soak or cook the rice noodles according to the package, then drain and rinse under cold water.
  2. Whisk the peanut butter, soy sauce, juice of the limes, brown sugar, garlic, ginger, sriracha, and a few tablespoons of warm water into a smooth sauce.
  3. Steam or boil the edamame until tender, about 4 minutes.
  4. Toss the noodles with the sesame oil, julienned carrot, bell pepper, edamame, and the peanut sauce until evenly coated.
  5. Divide among bowls and top with scallions and crushed peanuts.
