Ingredients
- 14 oz wide rice noodles
- 1 lb boneless skinless chicken thighs
- 1.5 cups Thai basil leaves
- 1 bell pepper
- 5 garlic cloves
- 4 Thai chilies
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 3 tbsp neutral oil
How to cook it
- Soak the wide rice noodles in hot water until pliable, then drain.
- Pound the garlic and chilies together and stir the fish sauce, soy sauce, oyster sauce, and brown sugar into a bowl.
- Heat the oil in a wok over high heat and stir-fry the sliced chicken until cooked, about 5 minutes.
- Add the garlic chili paste and sliced bell pepper and stir-fry for 2 minutes.
- Add the noodles and the sauce and toss over high heat until the noodles are coated and lightly charred, about 3 minutes.
- Turn off the heat, fold in the Thai basil until wilted, and serve.
