Pad Thai

Ingredients
- 12 oz flat rice noodles
- 1 lb shrimp
- 8 oz firm tofu
- 3 large eggs
- 2 cups bean sprouts
- 4 scallions
- 1/3 cup crushed peanuts
- 3 tbsp fish sauce
- 3 tbsp tamarind paste
- 3 tbsp palm sugar
- 3 garlic cloves
- 3 tbsp neutral oil
- 1 lime
How to cook it
- Soak the rice noodles in hot water until pliable, about 10 minutes, then drain.
- Whisk the fish sauce, tamarind paste, and sugar for the sauce.
- Heat 1 tbsp oil in a wok over high heat and fry the tofu until golden, then the shrimp until pink, and remove both.
- Add the remaining oil and garlic, push to one side, and scramble the eggs.
- Add the drained noodles and sauce and toss until the noodles absorb the liquid, about 3 minutes.
- Return the shrimp and tofu, add the bean sprouts and scallions, and toss to heat through.
- Serve topped with crushed peanuts and lime wedges.
