Ingredients
- 1.5 lb ground chicken
- 2 tbsp jasmine rice
- 3 shallots
- 4 scallions
- 1 cup fresh mint leaves
- 1 cup cilantro
- 3 tbsp fish sauce
- 1/4 cup lime juice
- 1 tbsp Thai chili flakes
- 1 tsp brown sugar
- 1 head butter lettuce
- 4 cups cooked jasmine rice
How to cook it
- Toast the 2 tbsp raw jasmine rice in a dry skillet until deep golden, then grind it to a coarse powder.
- Cook the ground chicken in a skillet with a splash of water over medium-high heat, breaking it up until cooked through, about 7 minutes.
- Take the pan off the heat and stir in the toasted rice powder, fish sauce, lime juice, chili flakes, and brown sugar.
- Fold in the sliced shallots, scallions, mint, and cilantro while the chicken is still warm.
- Taste and adjust with more lime or fish sauce for a bright, salty, sour balance.
- Serve with butter lettuce leaves for wrapping and a bowl of jasmine rice.
