Panang Curry Chicken

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 4 tbsp panang curry paste
- 27 oz coconut milk
- 1/3 cup roasted peanuts
- 1 red bell pepper
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 4 kaffir lime leaves
- 1/2 cup Thai basil leaves
- 1 tbsp neutral oil
- 4 cups cooked jasmine rice
How to cook it
- Grind the roasted peanuts to a coarse powder.
- Fry the panang paste in the thick coconut cream from the top of one can until fragrant and oily, about 4 minutes.
- Add the sliced chicken and stir to coat, cooking for 5 minutes.
- Pour in the remaining coconut milk, ground peanuts, fish sauce, brown sugar, and torn lime leaves and simmer 12 minutes.
- Add the sliced bell pepper and simmer until the chicken is cooked and the sauce is thick, about 6 minutes.
- Stir in the Thai basil and serve over the jasmine rice.
