Ingredients

  • 10 large eggs
  • 3 cups baby spinach
  • 3/4 cup crumbled feta
  • 1/2 cup onion
  • 1/4 cup whole milk
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Heat the oven to 375F and grease a 12-cup muffin tin.
  2. Warm the olive oil in a skillet and wilt the spinach with the onion, about 3 minutes, then let cool slightly.
  3. Whisk the eggs with the milk, salt, and pepper.
  4. Divide the spinach mixture and feta among the muffin cups, then pour the eggs over to fill each cup three-quarters full.
  5. Bake until puffed and set in the center, 18 to 20 minutes.
  6. Cool 5 minutes, then run a knife around each muffin to release.
