Spaghetti Carbonara

Ingredients

  • 1 lb spaghetti
  • 8 oz pancetta
  • 3 large eggs
  • 2 egg yolks
  • 1 cup grated pecorino romano
  • 1/2 cup grated parmesan
  • 2 garlic cloves
  • 1 tsp black pepper
  • 1/2 tsp salt

How to cook it

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
  2. Meanwhile whisk the whole eggs, yolks, pecorino, parmesan, and plenty of black pepper in a bowl.
  3. Cook the diced pancetta with the smashed garlic in a large skillet over medium heat until crisp, then discard the garlic.
  4. Reserve a cup of pasta water, then drain the spaghetti and add it to the skillet off the heat.
  5. Pour in the egg mixture and toss quickly, adding splashes of pasta water until the sauce turns glossy and creamy.
  6. Serve at once with extra pecorino and black pepper.
